Hearty Beef Stew & Almond Bread Loaf

I am so far behind on my recipes...

I doubled the recipe.  This made so much delicious soup and it was easy to reheat.  You could also freeze some for later.  I put lunch and dinner size servings in mason jars for easy reheating.

Hearty Beef Stew

Ingredients:
1# beef (I used swiss steak 2#)
coconut oil
1 onion (I skipped- not Jim's favorite)
1 minced garlic clove
2 sliced carrots
2 sliced celery sticks
1 cubed sweet potato
beef stock
1 can roasted tomatoes (I used 1 can whole tomatoes, it was in the cupboard;0)
seasoning of choice (I used italian seasoning, garlic, pepper and celery salt - I don't measure just shake and taste)

Directions:

1. Saute beef in coconut oil, add in vegetables and spices - continue to saute until meat is browned.
2. Add in 2-3 cups beef stock and 1 can roasted tomatoes and water if needed to desired thickness.
3.  Bring to a boil, then turn to simmer until veggies are cooked (35 minutes)
4.  Salt and pepper to taste.

Almond Bread Loaf

Ingredients:
2 cups almond meal
1T baking powder
1t salt
2T coconut sugar
5 eggs
1/2 cup coconut milk
1/3 cup oil

1.  Heat oven to 350.
2.  Mix ingredients in a mixing bowl and let batter sit 2-3 minutes to thicken.
3.  Spread evenly on cookie sheet.
4.  Bake for approx 20 minutes or until golden on top.
5.  Slice, add butter & honey, ENJOY!
